Ingredients

1 Pound (3/4� thick) fresh or frozen skinless fish fillets, use Red Snapper, Rockfish or Whitefish
1/4 Cup fine dry bread crumbs
2 Teaspoons snipped fresh dill
OR
1/2 Teaspoon dried dillweed
1/4 Teaspoon dried tarragon, crushed
1/4 Teaspoon lemon-pepper seasoning
1/2 Cup cheddar cheese, shredded

Instructions

Thaw fish, if frozen. Cut fillets into 4 serving size portions. Rinse and pat dry with paper towels. Place fish fillets in a shallow baking dish; set aside.
In a small bowl combine breadcrumbs, dill, tarragon & lemon-pepper seasoning; spoon breadcrumb mixture over fish. Bake, uncovered, in a 400�F oven for 20 to 25 minutes or until fish flakes easily with a fork. Sprinkle with cheese; bake for 3 to 5 minutes more or until cheese melts.
