Ingredients

1 Pound bacon
3 Cloves garlic, minced
1/4 Cup onion, minced
9 Cups chicken broth
1 Teaspoon oregano
1 Teaspoon parsley
1 Teaspoon basil
14 Ounces cheese tortellini
1 (28 oz) Can crushed tomato
1 (8 oz) Package frozen chopped spinach
1 Cup grated cheese (Locatelli Romano)
Salt & pepper to taste

Instructions

Fry bacon and set aside. In bacon grease saut� onion and garlic on low heat about 10 minutes.
In a large pot break up the crisp bacon to small pieces and add cooked onion and garlic. Add broth & Italian seasoning. Bring to a boil, add Tortellini and simmer until cooked (per package directions) add tomatoes and simmer 5 minutes. Add chopped spinach and cook until tender, about 3 minutes. Add salt and pepper to taste. Ladle into bowls and top with grating cheese; I prefer Perpagine Locatteli. The cheese does make a difference!
