Ingredients
8 Small red potatoes, scrubbed & quartered
2 Pounds greens (spinach, collard or mustard)
1/2 Cup fully cooked ham, cubed
2 Medium onions, sliced
2 Cups water
1/8 Cup cider vinegar
Salt & pepper, to taste
Instructions
Put half of ham in crock-pot. Clean and rinse greens well, cut into strips and layer over ham in crockpot. Combine the rest of the ham with the onions, water, vinegar, salt and pepper; pour over greens in crockpot.
Cover and cook on LOW for 6 to 7 hours. You can serve this as a side dish, or as a main dish (goes great with corn bread).
