Ingredients

8 Ounces button mushroom, sliced
1 Small onion, peeled & diced
2 Tablespoons olive oil
4 Cups chicken broth
1 (14 1/2 oz) Can sauerkraut, rinsed & drained
1 (14 1/2 oz) Can crushed Italian tomatoes
1/2 Teaspoon caraway seeds
1 Celery stalk, chopped
1 Carrot, peeled & chopped

Instructions

In a skillet brown the mushrooms and onion in the olive oil. When lightly browned, put them into crockpot. Add the broth, sauerkraut and crushed tomatoes and stir to combine. Stir in the caraway, celery, and carrot. Cover and cook on LOW for 6 to 8 hours. Serve with crusty bread.
