Crockpot Cheesy Cauliflower Soup

Ingredients

2 Cups chicken broth
2 (8 oz) Packages frozen cauliflower
1 Medium celery rib, cut into 1/2" pieces
1 Medium carrot, peeled & cut into 1/2" pieces
1 Small onion, cut into eighths
1/2 Teaspoon dried thyme
Salt & ground pepper, to taste
1 Cup milk
1 1/2 Cups cheddar cheese shredded
Sour cream, for garnish

Instructions

Add all ingredients, except milk and cheese, into crockpot. Cover and cook on LOW heat setting until vegetables are tender, about 4 to 6 hours.
Carefully pour mixture into work bowl of food processor fitting with steel blade or into blender container. Cover and process until smooth. If you like it a little lumpy, use a potato masher and mash it in the crockpot.
Place your cauliflower mixture into a sauce pan stir in milk and cheese. Heat over medium heat stirring constantly until cheese is melted and mixture is hot.
Garnish with sour cream, if desired.
