Ingredients

6 Potatoes, peeled & cubed
1 Tablespoon fresh parsley, chopped
5 Cups water
2 Leeks, wee rinsed & chopped
1 Tablespoon salt
Pepper
2 Onions, chopped
1/3 Cup butter
1 Carrot, sliced
1 (13 oz) Can evaporated milk
1 Stalk celery, sliced
4 Chicken bouillon cubes
Fresh chives, chopped

Instructions

Place all ingredients except milk and chives in crockpot. Cover and cook on LOW for 10 to 12 hours or on HIGH for 3 to 4 hours. Stir in evaporated milk during last hour. Serve topped with chopped chives.
