Ingredients

1/2 Pound mild Italian sausage
1 Cup sliced carrots or baby carrots
1 Large potato, diced
1 Garlic clove, minced
2 (15 oz) Cans beef broth
1 (15 oz) Can northern or navy beans
1 (14 oz) Can Italian diced tomatoes
1 1/2 Cups water
1/2 Teaspoon dried Italian seasoning
1 Cup fresh green beans, cut into1" pieces
Optional
1 Cup cabbage or spinach, chopped
Parmesan cheese

Instructions

Brown the sausage and at the end saut� the garlic careful not to scorch.
Combine everything in the crockpot except the green beans and cabbage.
Cook on LOW for 7 to 9 hours.
Add the beans and the cabbage or chopped spinach and cook 30 minutes more.
Serve with the Parmesan cheese in bowls, you can also boil some pasta according to instructions and spoon some in the bottom of each bowl then top with the soup.
