Ingredients
1 (16 oz) Package dried lentils, sorted & rinsed
2 (14 1/2 oz) Cans vegetable broth
1 (6 oz) Package sliced Canadian-style bacon, coarsely chopped
2 Medium carrots, cut into 1/2� pieces
1 Medium potato, peeled & cut into 1/2� pieces
1 Medium onion, chopped
1 Medium stalk celery, cut into 1/2� pieces
4 Cups water
1 Teaspoon dried thyme leaves
1/2 Teaspoon salt
1/4 Teaspoon pepper
Instructions
Mix all ingredients in 3 1/2 to 6 quart crockpot. Cover and cook on LOW for 8 to 9 hours or HIGH for 3 to 5 hours or until lentils are tender. Stir well before serving.
