Ingredients
1 Medium onion, chopped
2 Cans southwest style soup, (vegetables with chicken)
2 Cans chili beans
3 Cans chunk chicken, do not drain water off
1 Can Rotel tomatoes with chiles
1 Can cream of mushroom soup
2 Boxes Rice-a-Roni, Mexican flavored
1 Pound Velveeta cheese
Instructions
Sautee onion; cook Rice-a-Roni as directed on box; then dump everything into crockpot.
Heat the soup mixture on HIGH till creamy (about 2 hours).
Serve hot, with tortilla chips or plain corn chips.
