Crockpot Yellow Pea Soup with Pork

Ingredients

1 1/2 Cup dried yellow peas
2 1/2 Quarts water
1 Pound lightly salted side pork OR 2 Pounds fresh shoulder or country style pork ribs
2 Medium onions, chopped
1/2 Teaspoon ground ginger
1 Teaspoon marjoram
1/4 Teaspoon thyme
1 Tablespoon sugar
Salt & pepper to taste
Mustard to stir in to taste

Instructions

Wash peas and pick over. Place in crockpot and cover with cold water overnight. Don't change water.
Set crockpot to HIGH and bring peas to a boil. Skim off loose shells and skins. Add the rest of the ingredients (except mustard) and give a big stir. Cover pot and keep cooking on HIGH for 4 to 6 hours or until soft and fragrant.
Remove the pork and cut into bite size pieces. Add mustard to taste at the table. Crisp bread and beer make nice accompaniments.
