Crockpot Hearty Mixed Bean Stew with Sausage

Ingredients

3/4 Pound sweet Italian pork sausage, casing removed
10 Cups chicken broth
1/4 Teaspoon ground black pepper
2 Medium carrots, chopped
2 Stalks celery, chopped
3/4 Cup dried pinto beans
3/4 Cup dried navy beans
3/4 Cup dried kidney beans
1/4 Cup sun-dried tomatoes in oil, drained & thinly sliced
Grated Parmesan cheese

Instructions

Cook sausage in medium skillet over medium-high heat until sausage is browned, stirring to separate meat. Place in 5 to 5 1/2 quart crockpot.
Add broth, black pepper, carrots, celery and pinto, navy and kidney beans.
Cover and cook on LOW for 7 to 8 hours, or on HIGH for 4 to 4 1/2 hours.
Stir in tomatoes, cover and cook for 1 hour or until beans are tender. Serve with cheese.
