Ingredients

1 Pound black beans, soaked overnight and drained
2 Tablespoons vegetable oil
1 Large yellow onion, finely chopped
2 Garlic cloves, minced
2 Tablespoons fresh cilantro or Italian parsley, minced
2 Quarts chicken broth or vegetable broth
1/4 Cup crumbly fresh cheese, such as feta cheese

Instructions

Combine all ingredients except the cheese in crockpot. Cover and cook on HIGH 2 hours, then on LOW 8 to 10 hours. To serve, put a scoop of rice in the bottom of a soup bowl and sprinkle some cheese evenly over the rice; then pour the soup over the cheese.
