Tuna & Two Bean Salad

Ingredients

1 Cup frozen baby lima beans
2 Cups fresh green beans, sliced
2 Scallions, sliced thin
2 Tablespoons orange juice
2 Teaspoons olive oil
1 (6 ounce) Can white albacore tuna packed in water, drained & flaked

Instructions

Bring a sauce pan of water to a boil, add lima beans and cook for 5 minutes. Add green beans and cook one minute longer. Drain and refresh under cold water.
In a serving bowl, combine scallions, orange juice, olive oil salt and pepper. Add lima beans and green beans. Toss to mix.
Mound tuna in center of salad, sprinkle with pepper and a touch of olive oil. Serve.
