Ingredients
1/2 Cup rice, cooked
6 Cups chicken broth
2 Boneless, skinless chicken breasts or 3 thighs
3 Carrots, pealed & sliced thin
5 Celery stalks, sliced thin
2 Large leeks, sliced thin (green & white parts only)
1/4 Teaspoon black pepper
1/4 Teaspoon garlic powder
1 Teaspoon Italian seasoning
Salt to taste
Instructions
Cook rice according to package directions. While rice is cooking, place remaining ingredients in pressure cooker and bring to pressure. Cook for 10 minutes on medium heat with regulator rocking slowly. Remove from heat and let pressure drop normally. Stir in rice and serve immediately.
