Ingredients

6 Eggs, beaten
1 Cup cheddar or Velveeta cheese, shredded
1 Cup chopped breakfast sausage, ham or bacon
6 Small potatoes, shredded

Instructions

Coat pressure cooker in oil and preheat without cover. Meanwhile shred potatoes in processor, rinse and squeeze all moisture out, let brown in cooker while making other preparations. Beat eggs, set aside. Shred cheese and meat in processor as well. Break up potatoes and add 1/4 cup of water, then rest of ingredients. Combine lightly. Cover and just bring to pressure and cook for 7 to 10 minutes. Serve immediately with toast.
