Ingredients
1 Tablespoon cooking oil
1 Large onion chopped
1 Cup celery, diced
1/2 Cup green bell pepper, diced
1/2 Teaspoon salt
1 Cup uncooked rice
2 Cups tomato juice
Instructions
Heat pressure cooker, add oil and saut� onion, celery and bell pepper. Add remaining ingredients and stir. Close cover and place pressure regulator on vent pipe. Bring to pressure and immediately remove from heat to let pressure reduce naturally. Stir gently with a fork and garnish with crumbled bacon.
