Ingredients

Yams
3 Large yams
4 Tablespoons butter
2 eggs
1/3 (14 oz) Can evaporated milk
1 Teaspoons vanilla
1/2 Cup granulated sugar
Topping
5 Tablespoons butter
1 Cups brown sugar
1/2 Cup flour
1 Cups pecans, chopped

Instructions

Bake yams in a 350�F oven until tender, approximately 45 to 60 minutes; let cool. Remove the outer skins to mash. Add butter, eggs, milk, vanilla and sugar; mix with an electric mixer. Spread the mixture out evenly into a baking dish, set aside (can be refrigerated at this point).
For crumb topping, combine the remaining ingredients and sprinkle over top. Bake at 350�F until warmed through and golden. Serve hot.
