Ingredients

2 Cups onion, sliced
2 Cups celery, sliced
4 Gloves garlic, crushed
1 1/4 Cups chicken broth
6 Chicken drumsticks (1 3/4 lb), skin removed
1 Teaspoon paprika
1/2 Teaspoon salt
1/4 Teaspoon pepper
1 Pound kielbasa, sliced
2 Cups 5-minute rice
1 Large red pepper, cut in narrow strips
Scallions, chopped

Instructions

Mix onion, celery, garlic and broth in a 5 1/2 quart or larger crockpot.
Rub drumsticks with paprika, salt & pepper, add to crockpot along with the sausage.
Cover and cook on LOW 7 to 8 hours, or until chicken is tender. Remove drumsticks to a large plate and cover to keep warm.
Add rice and pepper strips to crockpot. Cover and cook 15 minutes, or until rice and pepper are tender. Sprinkle servings with scallions.
