Ingredients
12 Eggs
1/4 Cup water
1/2 Teaspoon salt
Dash pepper
Dash Tabasco
2 Tablespoons butter
2 Avocados
1 (7 oz) Can chopped green chilies
1 (7 oz) Can green chili salsa
3/4 Pound sharp cheddar cheese, shredded
Instructions
Mix first 5 ingredients in blender. Melt butter in bottom of large skillet. Add egg mixture and cook, stirring constantly. When eggs are set but still moist, remove from heat and spoon onto warm platter. Peel avocados, mash and spread over eggs. Sprinkle with chilies and pour the salsa on top. Sprinkle with cheese and broil until cheese is bubbly.
