Ingredients

6 Cups frozen corn, thawed
1/2 Red pepper, diced
1/2 Onion, diced
1/4 Cup butter
1 Cup milk
1/2 Teaspoon seasoned salt
1/4 Teaspoon pepper
4 Ounces cream cheese, softened
1 Cup grated cheddar cheese
1 Tablespoon flour (optional)
Fresh parsley, minced (optional)

Instructions

Put corn, onion, and red pepper in crockpot, add milk, butter, pepper, and seasoned salt and stir together.
Cover and cook on LOW for 4 hours.
Just before serving, add cream cheese and grated cheddar cheese to corn. Stir together until cheese is melted.
If the creamed corn is a little too thin, sprinkle flour over it and stir together, Let it sit for a few minutes to thicken.
After it is the desired consistency and cheeses are melted, remove from heat and add minced parsley, if desired.
