Ingredients

1 Pound dried black beans, rinsed
1 1/2 Pounds pork shoulder
1 Onion, chopped
1 Tablespoon chopped chipotle chiles in adobo sauce, + 2 tablespoons sauce
Salt
2 Teaspoons cumin
4 Garlic cloves, finely chopped
6 Cups chicken broth
Sour cream, salsa and cilantro or parsley, for garnish

Instructions

Combine broth, onion, garlic, chiles, adobo sauce and cumin in crockpot. Add beans and pork, cook on LOW for 8 hours or until beans are tender and pork easily pulls apart. Transfer pork to bowl and break into large pieces. Puree half the soup. Stir pork back into the soup and season with 1 teaspoon salt, or to taste. Serve with the sour cream, salsa and cilantro, if desired...
