Ingredients
2 Turkey legs, cooked & de-boned
1 Tablespoon olive oil
1 Green pepper, diced
1 Small onion, diced
3 Large cloves garlic, diced
1 Tablespoon dried basil
2 Teaspoons fennel seeds
1/4 Teaspoon crushed red pepper
6 Cups broth from the cooked turkey or canned broth
1 Can of diced tomatoes
1 Carrot, diced
2 Medium zucchini, sliced
1 Package of tortellini
Parmesan for serving
Instructions
Using the olive oil saut� the green pepper, onion, garlic and carrots. Add to crock pot with the broth. Add seasonings and cook on LOW all day; one hour before serving add the tortellini, the zucchini and the turkey pieces. Check for doneness at 45 minutes. Serve with fresh grated Parmesan on top and good hearty bread.
