Ingredients
1/2 Cup dry navy beans, or great northern beans
1/2 Cup dry black beans or kidney beans
1/2 Cup dry lima beans
1/2 Cup dry garbanzo beans
1/2 Cup dry split peas
2 Cups fully cooked ham, cut into 1/2" pieces
1 Large onion, chopped (1 cup)
2 Medium carrots, chopped (1 cup)
1 Teaspoon dried basil, crushed
1 Teaspoon dried oregano, crushed
3/4 Teaspoon salt
1/4 Teaspoon pepper
2 Bay leaves
Instructions
Rinse beans and drain them. Combine the beans, peas & 6 cups of cold water in a large saucepan. Bring to boiling; reduce heat and simmer, uncovered, for 10 minutes. Drain & rinse the beans & peas.
Meanwhile, combine the ham, onion, carrots, basil, oregano, salt, pepper & bay leaves in a 3 1/2 to 4 quart crockpot. Stir in the drained beans & peas, and 6 cups of fresh water. Cover & cook on LOW for 8 to 10 hours (or cook on HIGH for 4 to 5 hours). Discard the bay leaves and season to taste with salt & pepper.
