Ingredients

1 Medium onion, chopped
3 Carrots, thinly sliced
2 Celery stalks, thinly sliced
4 Garlic cloves, minced
1/2 Teaspoon ground cumin
1 1/2 Teaspoon dried basil
1/2 Teaspoon chili powder
1/2 Teaspoon dried oregano
1 Teaspoon hot sauce
2 (16 oz) Cans black beans, drained, rinsed
1 (14 oz) Can crushed tomatoes
1 Cup ham, diced
2 (14 oz) Cans chicken broth
1 1/2 Cups cooked rice

Instructions

Combine all ingredients except rice in crockpot. Cover and cook on LOW for 8 to 10 hours. Add cooked rice before serving.
