Ingredients

1 Pound boneless pork country-style ribs, cut into 3/4" cubes
1/2 Pound fully cooked smoked sausage, cut into 1/2" slices
1 Cup onion, chopped
1 Cup celery, chopped
2 Garlic cloves, crushed
1 (15 oz) Can black beans, rinsed & drained
1 (15 oz) Can tomato sauce
1 (10 oz) Can diced tomatoes with green chilies
1 Cup beer at room temperature, or water
2 Teaspoons chili powder
1/2 Teaspoon ground cumin
Salt & pepper, to taste
Serve with:
1 Cup long grain rice, cooked
Sour cream

Instructions

Place all ingredients in crockpot, mix gently. Cover and cook on LOW for 8 to 10 hours until pork is tender. Serve over hot cooked rice and top with sour cream if desired.
