Ingredients

2 Cups potatoes, cut into 1/2� cubes
1 Large carrot, diced
1 Cup leeks, white parts only, chopped
1 Garlic clove, minced
4 Cups chicken broth
1/2 Cup pearl barley, uncooked
1 Bay leaf
1/4 Teaspoon dried thyme, crushed
1/4 Teaspoon black pepper
4 Ounces cooked Canadian bacon, cut into 1/4� pieces
1/2 Cup evaporated milk
2 Ounces half & half

Instructions

Combine potatoes, carrots, leek, garlic, chicken broth, barley, bay leaf, thyme, pepper and Canadian bacon in a crockpot. Cover and cook on LOW for 6 hours or until vegetables and barley are tender.
Stir in evaporated milk and half & half and heat through, uncovered, for 10 to 15 minutes.
