Ingredients

2 (32 ounce) Bag frozen hash brown potatoes
2 Pounds of bacon diced, cooked & drained
OR
2 Pounds cooked ham, cubed
OR
2 Pounds breakfast sausage
1 Can Ortega chilies
1 Large onion, diced
1 Green bell pepper, diced
3 Cups shredded cheddar or Monterey Jack cheese
2 Dozen eggs
2 Cup milk
1/2 Teaspoon salt
1 Teaspoon pepper (more or less to taste)

Instructions

Place a layer of frozen potatoes on the bottom of the crockpot, followed by a layer of bacon, ham or sausage then chilies, onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.
Beat the eggs, milk, salt and pepper together. Pour over the crockpot mixture, cover and turn on Low. Cook for 10-12 hours.
