Ingredients

1 (10 oz) Package frozen pearl onions
1 (4 lb) Sirloin tip roast or other roast cut
1 (12 oz) Bottle dark beer
1/4 Cup dry mustard
1 Tablespoon caraway seeds
1 Teaspoon salt
1 Teaspoon freshly ground pepper
1/3 Cup all-purpose flour

Instructions

Place onions in a 4-quart crockpot, and then place roast on top of onions. Mix beer, mustard, caraway seeds, salt and pepper and pour over roast. Cook covered, on High for 8 hours. Remove roast and onions. Whisk flour into drippings, cook 10 minutes. Use more flour if you like thicker gravy. Slice roast and put back into gravy along with onions. Serve over cooked, medium-width egg noodles.
