Crockpot Beef Vegetable Barley Soup

Ingredients

1/2 Pound of stew meat, cut into bite size pieces
2 Cups carrots, sliced thin
2 Celery ribs with tops, sliced
1 Large onion, diced
1/2 Small package, green beans
1 Small package, frozen peas
1 (14 1/2 ounce) Can, diced tomatoes
1/2 Small package, lima beans
1 Teaspoon salt
1 Teaspoon garlic, minced
1 Whole bay leaf
2 Potatoes, pealed & cubed
1/4 Cup barley
3 Tablespoons dried parsley
2 (14 1/2 ounce) cans beef broth
1/4 Cup fresh basil, chopped or 1 Tablespoon dried basil

Instructions

Add everything but the barley to the crockpot. Add water to within 1 inch of the top of the crockpot and stir. Cook on High for 4 to 5 hours. Add the barley and continue cooking on High until barley is tender, about 2 to 3 hours.
Note: This is for a 5 quart crockpot, which is larger than the usual. Cut down the proportions if you have a smaller crockpot.
