Arrange chicken thighs on the bottom of the crockpot; set aside.
In a mixing bowl, combine garlic, honey, ketchup, soy sauce, oregano and parsley; whisk until thoroughly combined, pour the sauce over the chicken thighs.
Cover and cook on LOW for 4 to 5 hours or on HIGH for 3 to 4 hours.
Note
This can also be baked in the oven at 350F using a 9" x 13" pan. Bake for 45 to 50 minutes, or until juices run clear.
