Ingredients

5 Chicken thighs, boneless, skinless
1 (15 1/2 oz) Can black beans, drained & rinsed
1 (15 oz) Can corn, drained
1 (15 oz) Jar of your favorite salsa
1 (8 oz) Package cream cheese

Instructions

Place chicken thighs in crockpot. Combine black beans, salsa and corn and pour over chicken. Set crockpot to LOW and cook for 4 to 5 hours or until chicken is cooked.
Remove chicken from crockpot and shred; return shredded chicken to crockpot and add cream cheese and let sit for about 30 minutes. Stir in the cream cheese and serve over rice or in warm flour tortillas.
