Ingredients
1 (15 oz) Can black beans, rinsed & drained
2 (15 1/4 oz) Cans whole kernel corn, drained
1 Cup bottled salsa, thick & chunky
6 Chicken thighs, boneless, skinless
1 Cup shredded Cheddar cheese
Instructions
In a crockpot, mix together beans, corn and 1/2 cup salsa. Top with the chicken breasts then pour the remaining 1/2 cup salsa over chicken.
Cover and cook on LOW for 5 to 6 hours, or until the chicken is tender and cooked through; do not overcook or the chicken will be tough. Sprinkle the cheese on top, cover and cook until cheese melts, about 5 minutes.
