Ingredients

1 Cup all-purpose flour
3 or 4 Eggs
1 Teaspoon salt
1 Cup milk
1 Pound link sausage
1/2 Cup butter

Instructions

Mix the flour, eggs, milk and salt in a blender. Scrape down the sides and blend until everything is thoroughly incorporated.
Let the batter rest while you brown the sausage on all sides. (Resting the batter develops the gluten and brings structure to the batter.)
Melt the butter in an iron skillet and arrange the sausage like the spokes of a wagon wheel. Pour the batter over the sausage. Bake at 450F for 15 minutes and, without opening the oven, reduce the heat to 350F and bake an additional 15 minutes. Serve with maple syrup.
