Ingredients

1 Medium onion
1/2 Cup bell pepper, chopped
1 Pound pork sausage
6 Hard-boiled eggs
Flour (to thicken gravy)
2 Dozen biscuits

Instructions

Saut� onion and green pepper in oil lightly before adding sausage. Cook sausage, onion and bell pepper until sausage is crumbly. Prepare and start baking biscuits (Bisquick). Mix flour well into the sausage to begin the gravy. Add milk and simmer while stirring until gravy begins to thicken. (As in all gravies, the amount of flour affects the amount of milk required � the hand of the chef is crucial). Add sliced eggs as the gravy is nearly thickened. Salt and pepper to taste.
