Ingredients

8 Bacon strips
2 Cups frozen hash brown potatoes
1 1/2 Cups cheddar cheese, grated
6 Eggs
1 Cup milk
1/2 Cup green onion, sliced

Instructions

Cook strips of bacon in a large skillet until crisp, drain, reserve the drippings. In the same skillet saut� frozen hash brown potatoes until browned, about 10 minutes; transfer potatoes to a shallow, greased baking dish. Sprinkle with grated cheddar cheese and lay bacon across top.
In a medium bowl beat together eggs, milk, and thinly sliced green onions, pour into 8" or 9" baking dish, bake in a 350�F oven for 20 to 25 minutes, or until the center is set.
