Ingredients
6 Hard boiled eggs, peeled & chopped
2 Tablespoons butter
2 Tablespoons flour
1 Cup milk
Salt & ground black pepper, to taste
Cayenne pepper, to taste
Green onions, thinly sliced, for garnish, if desired
Buttered toast
Instructions
Melt the butter in a sauce pan then mix in the flour with a whisk, cooking a few minutes until it just lightly browns. Watch it carefully. Slowly whisk in the milk and cook a few minutes, stirring, until thickened, season with salt, pepper, and cayenne.
Mix in the chopped eggs.
Make your toast and butter it. Spoon the sauce over the toast and serve.
