Ingredients
3 Medium potatoes, pealed & sliced very thin
Salt to taste
Olive oil to coat
3 Eggs
3 Tablespoons Parmesan cheese, grated
Dash nutmeg
Black pepper to taste
Tomato sauce (optional)
Instructions
Wash potatoes to remove starch, add salt to taste and blend with olive oil to coat well.
Beat eggs with salt and Parmesan cheese. Add nutmeg and pepper to taste.
Spray crockette with Pam and pour eggs mixture in bowl with potatoes and mix well. Place a sheet of foil between crockette and cover and cook on Low for 4 hours, more if needed. Top with hot tomato sauce if desired and sprinkle additional Parmesan over sauce.
