Ingredients
1 (3 to 4 lb) Beef roast
1 Can diced tomatoes with green chiles (Rotel), slightly drained of liquid
Pinch of cumin
Pinch of oregano
Pinch paprika
Pinch chili powder
Pinch white pepper
3 Cloves of roasted garlic
1 Onion, minced
1 Can refried beans
Instructions
Place roast in crockpot and sprinkle herbs over meat followed by garlic & onions-pour slightly drained can of tomatoes over top.
Place on lid and turn control to LOW and cook 6-7 hours.
Drain liquid off of meat (in a strainer to keep diced tomatoes) until you have a good consistency, reserving a few tablespoons of liquid, stir in refried beans and add reserved liquid if desired to change consistency if to thick.
Serve with warmed tortilla shells, shredded cheese, salsa, sour cream, tomatoes, shredded lettuce, black olives, taco sauce and additional refried beans.
