Crockpot Stew Beef with Gravy

Ingredients

1/2 Onion, sliced
1 Small can sliced mushrooms
3 Pounds stew meat
1 Can cream of chicken soup
4 Tablespoons Tony Chachere's Instant Roux Mix (Brown)
1/2 Cup water
1 Tablespoon cornstarch

Instructions

Brown meat in frying pan, drain and set aside. Put onion and mushrooms in bottom of crockpot. Put stew meat on top of onions and mushrooms Mix the soup, roux mix and water--get all the lumps out of mixture then pour over the meat.
Cook on LOW all day, about 30 minutes before you want to eat mix1 Tablespoon cornstarch and a small amount of water together then pour into crockpot and mix well. Turn on HIGH to thicken gravy.
