Ingredients
1 (3 - 4 lb) Bottom round roast
1 Teaspoon salt
1/2 Teaspoon pepper
1 (28 oz) Bag of honey gold potatoes
1 Pound baby carrots
1 (32 oz) Box beef broth
2 (10 1/2 oz) Cans cream of mushroom soup
4 Large garlic cloves, chopped
1 Yellow onion, chopped
1/2 Teaspoon of dried
Instructions
Rub the roast with 1 tablespoon of salt and 1 teaspoon of pepper.
Place the roast in crockpot, fat side up.
Cut potatoes in half and add to crockpot.
Add carrots, chopped onion and chopped garlic.
In a separate bowl, whisk together the mushroom soup and beef broth. Add salt, pepper and oregano and mix to combine
Pour the soup mixture over the roast.
Cover and cook on HIGH in the slow cooker for at least 8 hours.
Using 2 forks shred the beef.
