Ingredients
1 (3 to 4 lb) Pound boneless chuck roast
1 Tablespoon olive oil
Salt & pepper
1 Medium onion, chopped
3 Celery stalks, sliced
1 Tablespoon garlic
1/2 Cup red wine
1 Package Lipton onion soup mix
2 Cups hot water
1 Tablespoon Worcestershire sauce
2 Bay leaves
5 Potatoes, peeled & quartered
1 (16 oz) Bag baby carrots
Instructions
Salt and pepper roast generously. Sear roast in olive oil in hot skillet for 5 minutes on each side. Place the roast and the rest of the ingredients in crockpot and cook on LOW for 5 to 7 hours, stirring ingredients every 2 hours. Meat will "fall apart" and be extremely tender.
