Ingredients
1/2 Pound ground pork sausage
1 Pound beef stew meat, chopped
11 Garlic clove, minced
2 (14 1/2 oz) Cans diced tomatoes with green chilies
1 (28 oz) Can baked beans
OR
1 (28 oz) Can pinto beans
1 Cup fresh mushrooms, halved
1 Cup frozen pearl onions
1 Large red bell pepper, seeded & chopped
3 to 6 Jalapeno peppers, seeded & chopped
1 (18 oz) Bottle barbecue sauce
2 Tablespoons brown sugar
1/2 Teaspoon freshly ground black pepper
1/4 Teaspoon sea salt
1/4 Teaspoon crushed red pepper flakes
Instructions
In a large skillet cook sausage, stirring frequently, until browned; drain fat. Set aside. In same skillet, cook beef until browned, stirring frequently Add garlic, cook one minute more. Transfer to a 5 or 6 quart crockpot.
Add tomatoes, beans, mushrooms, onions, red bell pepper, barbecue sauce, brown sugar, black pepper, salt, red pepper flakes and 2 cups water. Cover and cook on LOW for 8 to 10 hours or HIGH for 4 to 5 hours.
