Ingredients

1/2 Pound thick sliced bacon
1 Medium onion, chopped
2 Chicken thighs, boneless, skinless, chopped
4 Garlic cloves, chopped
1 Jalapeno, seeds & stem removed, chopped fine
1 Teaspoon salt
1 Tablespoon black pepper
1 Pound great northern beans
3 Cans chicken broth
1 Can water

Instructions

In a skillet cook the bacon until some of the fat is rendered. Remove the bacon, chop and set aside. Add onion and chicken to the bacon fat then add the garlic, jalapeno, salt, and pepper. After the chicken is cooked and onion is soft, transfer it and the bacon to a crockpot. Add beans, chicken broth, and half the water, stir and cover. Cook on HIGH for 5 to 6 hours. When beans are soft and liquid is creamy it is done. Adjust seasonings to taste.
