Ingredients

1 1/2 Pounds smoked sausage, cut into 1" pieces
1 (16 oz) Can kidney beans, rinsed & drained
1 (15 1/2 oz) Can great northern beans, rinsed & drained
1 (15 oz) Can black beans, rinsed & drained
1 Cup onion, chopped
1 Cup water
1 (8 oz) Can tomato sauce
2/3 Cup celery, chopped
1 Teaspoon chicken bouillon granules
1 Teaspoon garlic, minced
1 Bay leaf
1/2 Teaspoon pepper
1/4 Teaspoon dried oregano, optional
1/4 Teaspoon dried thyme, optional
Hot cooked rice

Instructions

In a 5 quart crockpot, combine the first 12 ingredients. Sprinkle with oregano and thyme if desired. Cover and cook on LOW for 4 to 4 1/2 hours or until heated through. Discard bay leaf. Serve with rice.
