Ingredients

1 Pound dry pinto beans
Chicken stock to cover beans by 1� to 2�
1 Small onion, chopped
1 Teaspoon garlic powder
1 1/2 Teaspoons ground cumin
1 1/2 Teaspoons pure chile powder
1/2 Pound smoked ham or sausage, diced or thick-sliced bacon, fried & diced
1 Tablespoon bacon drippings
Salt to taste

Instructions

Pick over and rinse beans several times. Put beans in crockpot and cover with chicken stock. Add onion, garlic powder, cumin, chile powder and meat. Cover and cook on HIGH for 4 hours, stirring occasionally. Add salt reduce setting to LOW and cook for 4 more hours.
NOTE: For thicker beans, when beans are tender, puree about 1 cup of beans with some cooking liquid in blender and return to pot.
