Ingredients
8 Cups water
2 Smoked pork hocks
1 Medium red onion, chopped
1 Medium red pepper, chopped
5 Cups dry pinto beans, rinsed
1/2 Pound bacon & grease, chopped
2 Tablespoons chili powder
1 1/2 Teaspoons salt
1 Teaspoon pepper
3 Dashes smoked paprika
Instructions
Put water in large pot or crockpot and place smoked pork hocks in bottom of pot. Place all ingredients in pot except bacon and cover. Cook bacon in frying pan until almost crisp. Put chopped bacon and grease in crockpot. Cover and cook on medium heat on stove top for 7 hours or in crockpot on HIGH for 10 to 12 hours, stirring occasionally. When beans are done, take skins off hocks and bones out of pot. Cut meat and return to crockpot.
