Ingredients

1/2 Cup butter, softened to room temperature
1/2 Cup white sugar
3 Eggs
1/2 Cup flour
1/2 Teaspoon vanilla
1/2 Teaspoon freshly ground cardamom
6 Tablespoon ice water
A damp towel to immediately wipe up batter spills

Instructions

Cream together the butter and sugar. Whisk in the eggs, one at a time. Add vanilla and ground cardamom. Stir in flour, mixing well. Add water until batter is the consistency of a thick cream sauce.
Lightly grease krumkake maker with cooking spray or melted butter. Pour a heaping tablespoon of batter onto the center of the iron. Close krumkake maker and cook until ready light on krumkake maker lights.
Lightly flour a krumkake cone to prevent sticking. Immediately roll cookie around the cone. Gently slide the cookie off the cone and allow to cool on rack.
Krumkake keep well at room temperature in an airtight sealed container (they'll turn soft if you don't store them properly).
VARIATION
Almond Krumkake
1 Tablespoon almond extract OR 2 tablespoons Amaretto, replaces vanilla extract and cardamom flavoring.
