Ingredients
1 Egg
2/3 Cup milk
1 1/4 Cup flour
2 Tablespoons sugar
1 Teaspoon baking powder
1/4 Teaspoon salt
Instructions
Beat milk with egg. Blend dry ingredients & gradually add milk mixture, beating constantly until smooth. Heat oil in a cast iron skillet to about 375�F. Hold finger over bottom (3/8� to 1/2� hole) of funnel. (I found a wooden spoon handle that will plug the hole of my funnel, so I use that instead of my finger to plug the funnel). Fill with batter. Hold funnel as near to surface of oil as possible, remove finger & fry using circular movement from center outward. Turn funnel cake over once. Remove from oil and sprinkle with sifted confectioners sugar.
