French Apple Cake

Ingredients

1/2 Cup unsalted butter, softened
1/2 Cup sugar
2 Teaspoons vanilla extract
2 Large eggs
3 Tablespoons rum
1 Cup all purpose flour
1 Teaspoon baking powder
Pinch of salt
2 Gala apples, peeled & chopped
1 1/2 Tablespoons sugar, to sprinkling over cake

Instructions

Preheat oven to 350�F. Oil & dust a 9" cake pan with flour.
Combine flour, baking powder ans salt in a mixing bowl and mix well, set aside.
Combine butter, sugar, and vanilla in a bowl and use a beater to whip until creamy. Add one egg at a time and beat till creamy.
Add rum and flour mix and beat till mixed.
Add in the chopped apples and fold gently.
Spoon into the prepared pan and smooth the top.
Sprinkle with the 2 tablespoons of sugar and bake for 40 minutes, until a toothpick inserted comes clean and top is golden.
Remove from oven and let it cool completely.
Remove it from pan and slice and serve.
