Ingredients
3/8 Cup shortening, soft
1 1/8 Cups sugar
2 Eggs
1 3/4 Cups cake flour
Or 1 1/2 Cups all-purpose flour
1/4 Teaspoon baking powder
1/2 Teaspoon baking soda
3/4 Teaspoon salt
3 Tablespoons buttermilk
3/4 Cup banana, mashed
3/8 Cup nuts, chopped, optional
Instructions
Preheat oven to 350�F.
Grease and flour two 8� layer pans or one 9� square baking pan.
Cream together shortening and sugar until fluffy. Beat the eggs in thoroughly.
Sift together the dry ingredients and stir in alternately with the buttermilk, banana and nuts. Pour into prepared pans. Bake until cake tests done.
Use whipped cream and sliced bananas for filling and spread whipped cream over top of cake. Place slices of bananas upright around outer edge.
Layers: 25 to 30 minutes
Square: 35 to 45 minutes
